Signum Pantheum

Signum Pantheum is the result of careful research and company study. Our interpretation aims at enhancing the territory and at returning to traditional flavours. The production technique allows for a bright intense red color with violet hues and an aromatic profile dominated by floral notes such as violet, rose and iris. The fruity part is characterized by notes of blueberry, plum and black cherries. The delicately sweet finish is balanced by good acidity and well-present tannins. It is a wine destined for long aging which will give new aromatic nuances over time.
Production method:
Signum Pantheum comes from a selection of grapes from the highest vineyards of the estate and dried for about three months in our naturally ventilated loft. An obsessive control of the health of the grapes allows for the absence of mold and rot. Destemming is followed by a few days of cold pre-fermentation maceration which increases the extraction of color and aromatic precursors. Fermentation takes place at low temperatures, between 12 and 16 °C, for about two weeks, slowing down and leaving a pleasant sugary residue. This is followed by a stop in steel for about 4 months and an aging in bottle for 8 months.
